Friday Menu #4.

I write this as I should be:

1.  Scrubbing my sink full of dishes
2.  Picking up 63,291 toys that are strewn across the floor
3.  Scrubbing my stinky toilet
4.  Dehydrating apples
…and last but not least,
5.  Putting away my mountain of clean laundry

But, who cares!  Instead, I chose to be here with you for no other reason than I love ya.  And I also wanted to bring you this Friday's Menu Plan!  My goal this next week is to use up the spare vegetables we have laying around from the garden – I've been able to harvest more beans, eggplant, kale, onions, herbs, and tomatoes.

I better get busy!

Oh, and did I mention that we have recently been blessed with a huge turkey?  I'm going to roast it on Sunday…and then you know what, folks?  It's turkey week on the homestead.

Just think of it like a practice for Thanksgiving.  Let's do this!

Sunday

Breakfast: Scrambled eggs & kefir smoothies
Snack: Homemade popcorn
Lunch: Leftovers from the weekend!
Dinner: Roast turkey, pumpkin rice pudding, roasted beets with garlic



Monday

Breakfast: Soaked oatmeal with fresh fruit
Snack: Cheese sticks, almonds
Lunch: Leftover turkey & rice pudding
Dinner: Caprese salad (fresh heirloom tomatoes, garden basil, mozzerella, roasted shallots, balsamic vinegar, olive oil, salt and pepper), baguettes, leftover turkey & fruit


Tuesday

Breakfast: Fried potatoes, eggs, sprouted corn tortillas, fresh fruit
Snack: Bananas, homemade protein bars
Lunch: Caprese salads, again!
Dinner: Soaked White Bean & Turkey Soup with Sage (I'll have to make two batches….one with beans and one without for my dear husband), baguettes, pear & candied nut spinach salad



Wednesday

Breakfast: Spiced applesauce & scrambled eggs
Snack: Homemade protein bars, sliced veggies
Lunch: Leftover soup & salad
Dinner: Waffles with pear butter and potato, veggie, & egg goulash



Thursday

Breakfast: Scrambled eggs & kefir smoothies
Snack: Apple slices, homemade spicy almonds
Lunch: Leftover waffles & goulash (I always make extra so we can enjoy them the next day, too!)
Dinner: Homemade Turkey Pot-Pies (an adapted version of this recipe).  I will be making a homemade pie crust to use as the topping instead of phyllo dough, spinach salad with dijon vinaigrette.
 

Friday

Breakfast: Soaked oatmeal with apples, eggs….and turkey.  Just kidding.
Snack: Homemade popcorn
Lunch: Leftover turkey pot-pies & salad
Dinner: Mom and Dad's!

Saturday
Who knows.  Turkey meatballs?  Fried turkey cakes?  I guess it all depends on how much we have left over still….Wanna come for dinner?

I'm also hoping to make an apple pie at some point this week….I have bags and bags of apples just smiling at me, waiting for their culinary destiny.  I haven't practiced a pie crust since last Thanksgiving, and I'm eager to give it another go.  I figured since I would have to make some up for our turkey pot-pies, I might as well make two batches and get a pie out of it!

So that's it!  Another week of food on the homestead.  I'm really aiming to utilize some of the goodness we have abundantly laying around at the moment – I've widdled my grocery list down to six items: potatoes (we just used the last of our homegrown ones! Boo!), brown rice, garlic, spinach, cream, & bananas.

Though I wonder what deliciousness the farmers market has to offer this weekend…

Dangit.

    I like the idea of lunch is always leftovers. No waste and not one thinking about making 2 brand new meals.
