Pantry Soup: One of my go-to weeknight meals

Pantry soup. One of my very favorite weeknight meals! Don't let the simplicity of this dish fool you. It takes a lot of effort to stock a pantry well – even if you aren't growing the food or preparing it all from scratch. Sometimes, it's about getting food on the table, and this pantry soup is a wonderful (and quick) alternative to take out. 

The bonus is that it's full of real, delicious, whole-food ingredients that will build you up big and strong! (This is what I tell my children, obv.) The broth alone is a wonderful nourishment to us all. Side note: I just made a gigantic pot of broth from an old rooster that we butchered and I don't think I've ever made such beautiful chicken broth. It was phenomenal. Proof that some things really do get better with age…
