No-bake cookies. The “healthy” kind!

It's hot here.

 
Really hot.
 
And there is no air conditioning on the homestead.
 
Bleh.
 
So, we did what any normal, sane couple would do. We went to my parents house so that we could sit in their air conditioned home that is always stocked with food.
 
Ahh… that's better. Don't you just love parents? I do.
 
While we were there, my Mom and I quickly whipped up a batch of these bad boys:
 
 
And let me just say…they pair wonderfully with a glass of wine. I'm just sayin'…
 
They also, surprisingly, taste wonderful with a glass of home-brewed KOMBUCHA. For those of you under 21. Again, I'm just sayin'…
 
And the best part is you don't have to bake 'em! Therefore, no unnecessary heat needeth cometh from your oven. Bonus: These are a healthier version of the same ‘ol no-bake cookie that you know and love. Cheers to easy, healthy changes!
 
No-Bake Cookies
You will need:
 – 1/2 cup coconut milk or whole milk
 – 1/2 cup coconut oil or butter
 – 1/2 cup honey
 – 1 cup unsweetened coconut, shredded
 – 5 tablespoons cocoa powder
 – 2 cups oats (soaked and dehydrated is best!)
 – 1 tsp. vanilla extract (try HOMEMADE!)
 – 4 tablespoons natural peanut butter
 
Step One: Mix the coconut oil (or butter), coconut milk (or milk), and honey together in a saucepan. Bring to a boil, and simmer for one or two minutes. Remove from heat.
 
 
Step Two: Get a cute assistant to help you. You never know when you're going to need a spoon licked clean.
 
 
Step Three: Mix in the vanilla and peanut butter. Then, mix in the oats, cocoa powder and coconut.
 
 
How long has this taken us now, a whoppin' five minutes? Score.
 
 
Step Four: After the mixture is combined, lay out in desired cookie size on a waxed paper lined cookie sheet. Allow to cool slightly, then, move the sheet to the refrigerator to finish cooling.
 
Step Five: After the cookies are completely cooled, gently move them to a tupperware and store in the fridge until you consume all of them.
 
Literally, I consumed all of them.
 
Except for one that I decided to share with her:
 
 
She even sent me home with a baggie of them. Let's just say, there were no survivors.
 
I. Lack. Self. Control.
 
And I love that when you're with your family, you don't even have to worry about putting them on a pretty plate.

Just eat them as is, from the pan, and enjoy them for their sweet simplicity.
 
Then finish off your glass of kombucha, ahem, or wine, and soak up the sunshine…
 
..from an air conditioned room.
