Friday Menu #3.

Why are Fridays so dang sweet?

Is it because I know I will have wonderful company come dinner time?

Is it because I have all the anticipation and promise of a fun filled weekend?

Is it because I know I get to wake up late tomorrow and indulge in waffles with pear butter?

Is it because I get to watch the new episode of Parks and Recreation on Hulu tonight?

Yes.

I think it is all of the those things.  So bring on that sweet Friday, I say!  Someone pour me a glass of coffee, or wine, and let's enjoy it!  Did someone say once that red wine helps to cure a head cold? No?  Hmm…I swore I could have heard that somewhere…

Let's be productive – shall we?

Sunday

Breakfast: Scrambled eggs, bacon, kefir smoothies
Snack: Homemade popcorn
Lunch: Leftovers from the weekend!
Dinner: Pear, toasted almond, and spinach salad with goat cheese, toasted baguette slices



Monday

Breakfast: Soaked oatmeal with fresh fruit
Snack: Cheese sticks, almonds
Lunch: Leftover spinach salad
Dinner: Caldo Verder Soup, pear and apple salad with vanilla yogurt & cinnamon



Tuesday

Breakfast: Fried potatoes, eggs, corn tortillas, fresh fruit
Snack: Bananas, homemade protein bars
Lunch: Leftover Caldo Verder Soup, fruit
Dinner: Egg frittata with peppers, potatoes, kale & goat cheese, green salad with dried cherries, candied nuts, & avocado



Wednesday

Breakfast: Apple tart & bacon
Snack: Homemade protein bars, sliced veggies
Lunch: Leftover frittata and salad
Dinner: Slow-cooker Asian Short Ribs (adapted version), jasmine rice, cabbage slaw



Thursday

Breakfast: Scrambled eggs with cheese, kefir smoothies
Snack: Apple slices, homemade spicy almonds
Lunch: Leftover short ribs, rice & slaw
Dinner: Homemade roasted heirloom tomato soup, grilled cheese, veggies & fruit slices
 

Friday

Breakfast: Soaked oatmeal with fresh fruit, eggs & bacon
Snack: Homemade popcorn
Lunch: Leftover soup, veggies, & fruit
Dinner: Mom and Dad's!



Saturday
I'm a free bird, baby.  On Saturdays, I do whatever I want.  Booya.

So there ya have it – another Friday Menu!  

Friday.  Such a sweet, sweet word.
