Small crop from your garden? Make homemade giardinera.

The harvest from the garden doesn't always go as planned and sometimes we're left with a small crop of odds and ends to deal with. The answer to a small basket of produce is quite simple (and extremely delicious): homemade giardinera. Giardinera means “from the garden” in Italian and that's the perfect name for the magic of this hodge-podge quick pickle. 

If you've never tried making homemade giardinera, now is a great time to try it. Do it. DO IT. I'm peer pressuring you.

    This might seem a strange question but once you’ve eaten the veg – can the vinegar be used again? Can it be heated up and re-used for another batch or is it better just to use it in cooking? Thanks. x
